chimichurri beef bowl

Shredded beef brisket, cilantro lime rice, bell peppers, fresh corn, tomatoes, queso fresco cheese and a side of chimichurri sauce. Chimichurri is an Argentinian herb sauce full of fresh and bright flavors, and it goes beautifully with beef. 
 
This meal holds well in the refrigerator for up to five days.
